Saffron from La Mancha is more than just a spice with an intense aroma, unique in its variety due to the special slow roasting process, which enhances all its natural qualities. Ninety percent of national cultivation is in Castilla-La Mancha. Local saffron culture dates back centuries and is still preserved today due to the special characteristics of its cultivation and harvesting. Harvesting is still done by hand, with flowers picked daily in autumn. Pistils, the saffron threads, are then separated from the petals. One by one, hand in hand.

Inland Castilla-La Mancha, in the regions belonging to the provinces of Albacete, Ciudad Real, Cuenca and Toledo.
