“Marzipan from Toledo” is the name given to the fine, compact paste created by mixing or kneading raw, peeled and ground almonds with sugar(s). This is one of Toledo’s most famous products. Almonds are the key ingredient. These almonds are sweet, peeled and have a minimum fat content, making their composition exquisitely delicious.
Production
Mixing the raw, peeled, and moistened almonds with the different types of sugar(s). The almonds used to make Marzipan from Toledo are sweet, peeled almonds with a minimum fat content of 50%. Beet or cane sugar, honey, glucose, sucrose, or other natural sugars may be used.
